What You’ll Need: Ingredients

The Cheese Blend (The Heart of the Recipe!)
This recipe requires a whopping 2.5 lbs of cheese, providing a perfect melt and flavor balance:
1 lb of Mozzarella
1 lb Colby Jack
8 ounces of Cheddar cheese
Prep Note: To prepare the cheese, you’ll need to divide each type—Mozzarella, Colby Jack, and Cheddar—in half.
Shred one half of each variety and keep the two resulting batches in separate bowls. Trust me on this: to handle this much shredding efficiently, your best friend is a food processor, such as the Cuisinart 8-cup model.
Sauce & Pasta Essentials
1 lb of pasta (Cavatappi or Cellentani)
3 tbsp of butter
3 tbsp of flour
1 can of evaporated milk
2 cups of whipping cream
A spoonful of Dijon mustard
Signature Seasoning Mix
In a separate bowl, mix together the seasonings : 1 tsp salt, ½ tsp black pepper, 1 tsp garlic powder, and 2 tsp smoked paprika. Divide into two equal parts.
Step-by-Step Instructions
Phase 1: Perfecting the Pasta
First, bring some water to a boil and salt it well. Once boiling, add 1 lb of pasta. You will boil the pasta for 8 minutes, making sure to stir every 2 minutes. After 8 minutes, drain the pasta and set it aside.
Phase 2: Creating the Cheese Sauce
Now, start on your sauce: melt 3 tablespoons of butter on medium heat. Once melted, add half of your seasoning mix, stir it, and let it cook for about 30 seconds. Next, add 3 tablespoons of flour, mix until fully combined, and allow it to cook for about 2 minutes to cook out the flour taste.
The next step is to slowly add 1 can of evaporated milk, pouring a little at a time. Use a whisk to ensure you get all the clumps out. Follow this by adding 2 cups of whipping cream, also adding in small increments and mixing well. Now, add the remaining seasonings and a spoonful of Dijon mustard, mixing thoroughly.
Phase 3: Melt the Cheese and Combine
Melt
Turn the heat to low or off. It’s time to add the cheese: take half of your shredded cheese blend and add it to the sauce, handful at a time, whisking until it’s all melted. If the sauce becomes too thick, you can add a splash of milk.

Combine
Once the cheese is melted, add the drained pasta and mix everything well to coat. Make sure to taste one noodle at this stage and add more seasoning if needed!

Phase 4: Layer and Bake
Preheat your oven to 350°. Lay half of the mac and cheese mixture into your basking dish. Add half of the remaining shredded cheese over that layer. Then, add the last layer of pasta, followed by the last layer of cheese on top. Bake the dish in the oven at 350° for 25 to 30 minutes.
Phase 5: The Grand Finale
