A Versatile Chicken Recipe

As a first recipe, I decided to introduce you to one of my favorite and most versatile chicken recipe. Hope you enjoy it.
"Easy and Yummy Chicken"
A Chicken recipe that everyone will love.

Equipment
- non stick pan
Ingredients
- 1 lb Chicken breast
- 1 large Onion
- 1 medium Fresh tomato
- 2 tbsp Tomato paste
- 2 Garlic cloves
- 1/2 cup Cooking oil I use canola oil
- 2 cups Water
Seasonings
- Black pepper
- Lawry's seasoned salt
- Adobo seasoning
- 1 Maggi cube
- Salt
Instructions
- Cut chicken breast in medium size cubes. Season with black pepper, Lawry's salt and Adobo. Set aside.
- Finely chop onion, tomato and garlic.
- Heat oil in a pan, add chicken and fry on medium high heat for about 10 minutes or until they start getting some color. Turn them over halfway.
- When they get some color, add chopped onion and tomato. Cover pan for about 7 minutes or until the onion and tomato are tender.
- Then add tomato paste and garlic. Cover pan for about 3 minutes.
- Add 2 cups of water, 1/2 tsp of black pepper, Maggi cube. Cover and cook on medium heat.
- Check seasoning, add salt if needed. (Remember the Lawry's seasoning and Maggi cube have salt in them).
- Cook until water is absorbed, onions are tender and oil comes on top. Your chicken is ready.
Notes
This chicken recipe can be served as a main or side dish. It can be served with pasta, couscous or rice. But also served alongside french fries, fried plantains or fried sweet potatoes.
Another thing I do is make beans/peas/vegetables, then add them into this chicken mixture. Let it simmer on low heat for about 5-10 minutes and serve.
Lastly, adjust the ingredients measurements and seasonings to your own liking.
The more onions you use, the more sauce you get.
The more tender you want the onions, the more water you add while cooking.
So make it your own if you want.
