Mashed Potatoes - Ultra Smooth and Creamy

Ingredients

  • 5 potatoes medium size
  • 4 tbsp unsalted butter
  • 3 tbsp cream cheese
  • 1/4 cup half and half or whole milk
  • salt
  • black pepper

Instructions

First step

  • peel the potatoes, cut in similar sizes, rinse in cold water
  • transfer into a pot, add water and salt, cover the pot  and bring to a boil
  • once it starts boiling, slightly uncover the pot and boil at medium high heat
  • when the potatoes are cooked (a knife should go in and out easily), drain the potatoes

Second step

  • while the potatoes are boiling, cut the butter and cream cheese in smaller pieces. It helps during the mashing process

Third step

  • return the drained potatoes into the pot and set the heat on medium low
  • let the potatoes dry out for about a minute then start mashing until you get the desired texture
  • add some salt and black pepper
  • add the butter and mash again (the butter should melt easily because of the heat)
  • add the cream cheese and mash
  • now use a spatula to stir and better combine all the ingredients
  • add 1/4 cup of warmed half and half (or whole milk, your preference) and stir gently to combine everything
  • Do a taste check and add more salt if needed.
    It's ready to be served. Enjoy

Notes

Picking your potatoes : choose either Idaho or Gold. They work best for this recipe in my opinion.
Milk: I prefer half and half but whole milk works fine too.
