Hamza ( African Couscous Dessert)

This dessert is made with couscous and yogurt.

Ingredients

  • 1 cup Pearl couscous
  • 2 cups Sour Cream
  • 3 cups Yogurt plain or vanilla
  • 1 cup Coconut milk
  • 1/4 cup Evaporated milk
  • 1/3 cup Sugar
  • 2 tbsp Butter
  • 1 tsp Vanilla extract
  • 1 tsp Orange blossom water
  • Nutmeg

Instructions

Making the yogurt

  • Combine sour cream, yogurt and sugar. Mix well
  • Add the coconut milk and mix well
  • Add the evaporated milk and mix well.
  • Taste the sugar and adjust if needed
  • Grate some nutmeg
  • Add the vanilla extract
  • Add the "Fleurs d'oranger"
  • Mix well and refrigerate

Making the couscous

  • Bring some water to a boil
  • Cook the couscous for 12 min
  • Drain the couscous
  • Combine the couscous with butter
  • Let the couscous cool down

Mixing everything

  • Gradually add the couscous into the yogurt mixture, mix well
  • Keep adding the couscous and mixing until you get your desired consistency
  • Once you like the consistency, refrigerate and serve cold!

Notes

  1. When making the yogurt, add more or less liquid depending on how thick you want it.
  2. The dessert thickens when placed in the refrigerator. So keep that in mind while mixing the couscous with the yoghurt.
