Cut the chicken breast in small cubes. Finely chop onion and tomatoes.
Season chicken with salt, black pepper, paprika, seasoned salt, and chipotle.
Heat oil in a pan and add butter. Once the butter has melted, add the chicken cubes and sautee for 5 min on each side, or until both sides get color.
Remove chicken from the pan and set aside.Add onion and tomatoes to the pan. Season with seasoned salt, sautee for 5 min and set aside.
Heat non stick grill pan on medium low, rub some oil onto one side of the tortilla.Place half of the tortilla on the pan, add chicken, tomatoes, onions, and cheese.
Cover with the other side of the tortilla. Press down for about a minute or until it gets some grill marks.Turn over and repeat.
Place tortilla on cutting board and cut in triangles.It's ready to serve 😋Enjoy!

As always, you can substitute the seasonings by using your favorites.You could also use a different type of cheese if you like.This recipe made about 6 large tortillas.
